PESSAC-LEOGNAN APPELLATION

Harvesting:
• 100% manual, with sorting in the vineyard
and transportation in small cases to avoid any
risk of oxidation
Vinification :
• Light pressing for the grapes, in inert
conditions (horizontal pneumatic press)

• Cold must settling (8°C) in small thermo-
regulated stainless steel vats

• Alcoholic fermentation at 16.5° in barrels
Maturing :
• Over fine lees, during 8 months, in concrete
tanks (30%) and 70% French oak barrels (mild
toast, 35% new wood and 35% used once
previously), with stirring (twice a month)
Average age of the vines :
• 18 years old
Consultant oenologist:
• Philippe Dulong

Soil :

• Clay-limestone and fine gravel over a clay-
limestone subsoil

• Plot-by-plot management with integrated
drainage system
Average yield of the vintage:
• 34 hl/ha
Blend :
• 61% Sémillon
• 39% Sauvignon Blanc
Alcohol content : 13°
Harvest period:
• Semillon : From 14thAugust to 17th September
2021
• Sauvignon : From 10th to 15 th of September
2021
Bottling date:
• 1st September 2022
LE COLOMBIER DE

“The first nose is subtle, but after swirling white fruit aromas arise. It is a very soft wine
in the mouth with a silky attack and a very smooth mid-palate. The Semillon is fully
expressed. The finish is rather oaky but with a nice length and a pleasant acidity.
A beautiful representation of our terroir in 2021.”
